Determine the size of your countertops based on the number and size of your appliances, including grills, side burners, sear zones, warming drawers and beverage centers. You also need to consider how many platters you’ll need to have. A platter takes up 16 inches of space, and there should be enough space on either side of the grill or prep or serve area for the platters.
In contrast to indoor kitchens where the working triangle principle is the basis of design, outdoor kitchens are separated into cook, prep and serve zones. Leave about four to five feet of space maximum between the counter areas to accommodate a caterer or bartender.
Counter height should be sized based on function. Industry standards are:
- Table height: 30 inches
- Counter height: 36-38 inches
